Chicharron de Queso with Loroco & Guacamole

Ingredients (4)

2 avocados

4 limes

1/4 chopped onion

2 tomatos, cubed

2 green chiles, chopped

1 tablespoon(s) oregano

1 tablespoon(s) olive oil

Salt and pepper to taste

1/2 bunch Papalo

2 cup(s) finely grated Gouda cheese

Parchment paper

A drinking glass for forming the shape



  1. Mix avocado with lime juice and salt.
  2. Add onion, tomatos, chile, oregano, olive oil, and papalo and mix well.
  3. Season to taste with salt and pepper. 

Chicharron de Queso

  1. Spread the grated Gouda loosely over the parchment paper in the shape of a circle or a rectangle with rounded edges. Put it on a stable cookie sheet or other flat surface for baking.
  2. Place in oven. The cheese should all melt together and bake until the edges are crispy looking and slightly browned. 
  3. Remove the cookie sheet from the oven and while it’s still hot, gently bend the parchment paper into a cylinder and put it in the drinking glass to let the shape dry and set for a few minutes. Then, gently peel away the parchment paper and serve.
  4. Serve with guacamole.
