Cheese and Passionfruit Tequeños (Fried Cheese Sticks)
Ingredients (15)
2 pound(s) passionfruit pulp
2 pound(s) sugar
1 cup(s) water
1 pound(s) flour
1 teaspoon(s) butter
2 tablespoon(s) salt
4 cup(s) oil
1 cup(s) water
1/2 pound(s) salty cheese
1/2 pound(s) passionfruit pulp
1 egg
Directions
Firm passionfruit jelly
Heat the water and sugar in a pan for a few minutes in order to create a syrup. Add the pulp and continue cooking on low heat until it changes color to a dark yellow or brown.
Pour into a glass jar and let cool. Cut with a wet knife and serve the portions.
Tequeños
In order to make the dough, mix the flour and salt together and make a well in the center. Add the warm water, the egg, and the melted butter. Mix well until you have a soft, elastic dough.
On a floured surface, roll out the dough until it is thin and cut strips 2 cm wide.
Cut small strips of cheese and passionfruit jelly and roll them up with the strips of dough until they are very compact. Remember to use a salty fresh cheese – it can be a hard white cheese or something similar to feta.
Fry the tequeños at a medium temperature for 5 minutes until the dough is golden, then take them out and set them aside.
Finally, serve the cheese and passionfruit tequeños as an appetizer.
