Prosciutto Wrapped Sweet Sliced Plantains

1/4 cup(s) picked tarragon leaves

1/4 cup(s) baby arugula

1 tablespoon(s) toasted almonds

1 tablespoon(s) lemon juice

1/4 cup(s) vegetable oil

3 tablespoon(s) Parmesan cheese

1 tablespoon(s) chopped garlic

Directions

1. Wrap each plantain slice with Prosciutto di Parma and hold with toothpick.
2. Fry in fryer at 350°F.
3. Place olive oil, lemon juice, garlic, salt, Parmesan cheese and almonds into blender.
4. Puree on medium high speed until smooth.
5. Add tarragon leaves and arugula and continue to puree.
