Coconut Horchata

Ingredients (1 1/2 Quarts)

1/2 cup(s) Jasmine rice, par-boiled for 8 minutes, strained

1/2 cup(s) sweetened, condensed milk

1 cup(s) 2% plain Greek yogurt

1 cup(s) coconut milk

1/4 cup(s) coconut flakes

3 tablespoon(s) almonds

2 teaspoon(s) vanilla extract

2 teaspoon(s) zest of lime

1.5 teaspoon(s) ground cinnamon

1 cup(s) ice

1 cup(s) coconut water

pinch salt

  1. Combine all ingredients in a blender and blend until smooth.
  2. Strain through a fine strainer.
  3. Serve in glasses over ice.
