Ahi Tuna Poke with Mango Ponzu and Tostones

1 pound(s) medium diced ahi tuna

3 tablespoon(s) small diced cucumber

3 tablespoon(s) small diced red onion

3 tablespoon(s) small diced mango pieces

2 tablespoon(s) chopped cilantro

2 tablespoon(s) chopped Italian parsley

1 teaspoon(s) paprika

2 tablespoon(s) vegetable oil

1/4 cup(s) mango ponzu

1 teaspoon(s) Kosher salt

1 tablespoon(s) mango chunks

1 tablespoon(s) white vinegar

2 tablespoon(s) soy sauce

1 teaspoon(s) ginger

1 teaspoon(s) garlic

1 tablespoon(s) lime juice

Directions

Combine the following ingredients and mix together gently:

  • Ahi tuna
  • Cucumber
  • Red onion
  • Mango pieces
  • Cilantro
  • Italian parsley
  • Paprika
  • Vegetable oil
  • Mango ponzu (see below)
  • Kosher salt

 

Place ingredients for the Mango Ponzu into blender and puree:

  • Mango chunks
  • White Vinegar
  • Soy sauce
  • Ginger
  • Garlic
  • Lime juice

 

Garnishes:

  • 12 Fried TIO Jorge Tostones
  • Picked cilantro leaves
  • 4 lime wedges
