Coconut Horchata

Yield: 1 1/2 quarts

Ingredients 

1/2 cup Jasmine rice, par-boiled for 8 minutes, strained
1/2 cup sweetened, condensed milk
1 cup 2% plain greek yogurt
1 cup coconut milk
1/4 cup coconut flakes
3 Tbsp almonds
2 tsp vanilla extract
2 tsp zest of lime
1 1/2 tsp ground cinnamon
1 cup ice
1 cup coconut water
a pinch salt

Directions 

1. Combine all ingredients in a blender and blend until smooth.
2. Strain through a fine strainer.
3. Serve in gasses over ice.
