Huevos Rancheros Verdes

Yield: 4 servings


8 corn tortillas folded into triangles
8 eggs 
3 cups Salsa Verde - La Patrona
Refried Black beans (optional)
Shredded Mexican Cheese


1. Fill tortillas with refried black beans and keep warm
2. Place salsa verde in a 10 in non-stick sauté pan bring to a simmer
3. Carefully crack eggs in to sauce and allow to poach until desired doneness
4. Place 2 bean filled tortillas on each plate
5. Top each tortilla with a poached egg and some of the salsa verde to cover
6. Garnish with shredded Mexican cheese and serve
