Caribbean Shrimp Cocktail

Yield: 4 portions


12 ea shrimp tiger p&d raw tail on
orange mandarin
4 Tbsp sauce chili siracha 
6 oz vinegar champagne 
8oz angel hair green cabbage hair w/carr 
2 Tbsp fresh cilantro  
6 oz fresh orange juice
1 Tbsp granulated sugar granulated
2 oz extra virgin olive oil


1. Poach the shrimp in water salt and pepper and chill immediately.
2. Combine the liquid ingredients and 1 tsp chili sauce.
3. Add shrimp to the liquid and let marinade for 30 min.
4. Add the cabbage to the liquid and reserve chilled
5. Spread 1 Tbsp of sauce on the plate serve 3 shrimps over the slaw. Garnish with mandarin.
