Yield: 4 servings


1 lbs. of Big Banana® Green Plantain Mash
1 C of pork cracklings cut into ¼ to ½ chunks
2 T butter
2 tsp. of mashed and chopped fresh garlic
Salt & pepper
¼- ½ C of chicken or vegetable broth


1. In a bowl place green plantain mash and defrost in the microwave for 2 minutes or until warm.
2. Add butter, mashed garlic and pork cracklings and mix well.
3. Add enough broth to moisten lightly.
4. Add salt and pepper to taste.

Serve hot with pulled pork, chicken or shrimp dish
