Ahi Tuna Poke with Mango Ponzu and Tostones

Ingredients

1 lb medium diced ahi tuna
3 T. small diced cucumber
3 T. small diced red onion
3 T. small diced mango pieces
2 T. chopped cilantro 
2 T. chopped Italian parsley
1 tsp paprika
2 T. vegetable oil
¼ c. mango ponzu
1 tsp Kosher salt

Procedure

Combine all ingredients and mix together gently

Mango Ponzu Ingredients

1 T. Mango Chunks
1 T. White Vinegar
2 T. Soy Sauce
1 tsp. Ginger
1 tsp. Garlic
1 T. Lime Juice

Procedure

Place ingredients into blender and puree
Garnishes
12 ea Fried TIO JORGE Tostones
Picked cilantro leaves
4 ea lime wedges
