Pork Al Pastor Tacos

Yield: 8-10 servings


1ea. boneless pork shoulder de-fatted, and cut into 2 inch pieces
Salt and pepper to taste
3 huajillo peppers
3 ancho peppers
1 garlic clove, chopped
1 roasted tomato, peeled and with no seeds
1 onion, finely chopped
1 tbsp of cumin
1 cup pineapple juice
5 cloves


1. Season pork with salt and pepper and let rest for 1 hour
2. Wash peppers, place in pot with water and bring to boil
3. Place peppers, tomato, onion, garlic, cumin, and cloves in blender and blend together
4. Add pineapple juice to the mix and strain into a pot. Let the sauce boil and season with salt.
5. Mix well, remove sauce from stove and let cool.
6. Add the sauce to the pork and let marinate for at least 4 hours or overnight.
7. Place in a large sauté pan with a tight fitting lid
8. Bring to a simmer over high heat, cover and then place into 375 degree oven and cook for 2 hours or until tender
9. Allow to cool slightly or overnight
10. Reheat in a sauce pan or grill, serve with additional sauce
