Tequila and Lime Fajitas

Yield: 10 servings


3lbs Beef Fajitas SuKarne
½ lbs red onion
½ lbs red pepper
½ lbs green pepper
5 fl oz tequila
2 fl oz lime juice
5 piece corn cob
2 piece eggs
1 oz mustard
1 oz garlic
1 oz vinegar
1 oz chicken flavor bouillon
1 cup olive oil
6 oz cotija cheese (dry cheese)
10 piece wooden sticks
4 oz guajillo chile
salt and pepper to taste


1. Place a frying pan on the stove at high heat, when the pan its extremely hot add a little bit of olive oil and incorporate our beef fajitas, once they are sealed pour in the vegetables cut in medium size slices.
2. Let all the moist evaporate and then add tequila (very carefully because it will flame). Let the alcohol evaporate for couple of seconds and pour in lime juice, add a pinch of salt and pepper.
3. Place corn cobs in a pot with boiling water until cooked.
4. In a blender pour in the eggs, onion, garlic, vinegar, mustard, chicken flavor bouillon, guajillo chile and blend at high speed, once it’s all mixed add oil slowly until thick.
5. Take a corn cob and rub it with the guajillo mix and sprinkle cotija cheese.
