Rib Eye with Mole

Yield: 10 servings


7 oz bittersweet chocolate
3 oz demi-glace powder
4 oz brown sugar
1 lb marrow bones
1 oz garlic
1oz onion
2 qt water
6 lbs Rib Eye SuKarne
Salt and pepper to taste


1. Place the marrow bones with garlic, onion and water in a pot and bring to fire, when the water starts to get warmer add the demi-glace powder and stir to avoid lumps.
2. Once the demi-glace powder is dissolved, increase the fire to thicken.
3. Add bittersweet chocolate and season with salt, pepper and sugar.
4. Take the rib eye to a hot grill and season with salt and pepper to taste and grill to liking.
