Borracho Beans (Drunken Beans)

Yield: 10-15 servings


1 #10 can Pinto beans drained
2 small onions diced fine
3 Tablespoons olive oil
2 tomatoes diced
1/2 bunch of cilantro chopped fine
1/2 cup beer
3/4 cup Cholula hot sauce - chipotle
Salt, pepper and hot sauce to taste


1. Heat olive oil in a 5 qt sauce pot; add onions sweat until wilted
2. Add tomatoes, cilantro, beer, and Cholula sauce cook for two minutes
3. Add beans and simmer for 30 minutes
4. Adjust seasoning with salt and pepper
